Keto Cabbage ROlls – Recipe
- 5 large leaves of Savoy cabbage
- 250g ground pork from pork shoulder
- 1 handful of cauliflower florets
- 5 shiitake mushroom caps
- 2 cloves of garlic
- 1 egg
- 3 tablespoons grated Parmesan cheese
- 1 onion
- 150ml 30% cream
- 1 teaspoon ground coriander seeds
- ½ teaspoon ground cinnamon
- ½ liter tomato passata
- 1 handful of parsley leaves
- 1 handful of cilantro leaves
- 1 tablespoon BeKeto Creatine Unflavoured
- 1 tablespoon BeKeto Fat Expert
- Soak the shiitake mushrooms in boiling water, then cut them into strips.
- Blanch the cabbage leaves in boiling water and use a meat mallet to flatten the thick part near the base.
- Dice the onion and sauté it together with the mushrooms until golden brown.
- Finely chop the cauliflower into small pieces.
- In a bowl, mix together the ground meat, cauliflower, spices, BeKeto products, mushrooms, chopped garlic, and grated Parmesan cheese.
- Add the sautéed onion with mushrooms, egg, chopped cilantro, salt, and pepper to taste.
- Shape the mixture into elongated forms and place them on the cabbage leaves.
- Roll up the cabbage leaves to form the cabbage rolls.
- Place two cabbage leaves at the bottom of a pot and arrange the cabbage rolls on top.
- Pour tomato passata over the cabbage rolls and add a little water.
- Cover the top with another cabbage leaf and cook over low heat for 2 hours. You can also press them down with a lid or plate.
- Remove the cooked cabbage rolls from the sauce, and blend the remaining sauce. Add salt and 30% cream.
- Continue cooking the sauce covered for another 5 minutes.
- Drizzle the cabbege rolls with the sauce and sprinkle them with chopped parsley.
