        The recipe for keto mascarpone ice cream is very simple:
        Whip the 30% cream with the erythritol until frothy.

        Stirring constantly, add the mascarpone cheese and vanilla (to taste) spoon by spoon.

        Pour into a container.

        *Additional step – stirring while freezing makes the ice cream fluffier – it is a good idea to stir the ice cream vigorously every 30 minutes or every hour. This step can be omitted.

        Whip the cream thoroughly at high speed.

        In a separate bowl, beat the egg yolk, erythrol, vanilla and cardamom to a frothy paste.

        • 180g 30% cream,
        • 1 whole egg,
        • 1 teaspoon erythritol (to taste),
        • vanilla concentrate or 1 measuring spoon of vanilla-flavoured protein isolate to taste.

        Preparation:
        The recipe for keto ice cream with vanilla is very simple:
        Separate the egg yolks from the egg whites.

        Beat the egg yolks until they are smooth and foamy.

        Mix the cream with the vanilla and erythrol in a pan.

        Bring to the boil and simmer for a few minutes until a slightly thick cream has formed.

        Reduce the heat and carefully pour the previously beaten egg yolk into the hot cream.

        Stir well and cook over a low heat, stirring constantly, until thick.

        Leave to cool.

        • 80 g 30% cream,
        • 1 whole egg,
        • 10 g erythritol,
        • 10-15 g cocoa,
        • 1 measuring spoon of protein isolate with natural chocolate flavour.

        USED IN THIS INSTRUCTION:

        Preparation:
        The recipe for keto ice cream with chocolate is very simple:
        Boil the cocoa with the cream.

        If you want the ice cream to be very chocolaty, add more cocoa.

        Stir regularly so that the cocoa does not burn.

        Mix the egg and erythrol thoroughly in a bowl and then place over a pan of boiling water.

        When the water in the pan comes to the boil, carefully pour the pre-cooked cream and cocoa into the bowl.

        After pouring, cook for about 5 – 7 minutes, stirring constantly.

        Leave the mixture to cool.

        Then place them in the freezer for 3 hours.

        Stir every half hour or so.

        Keto coconut ice cream

        Freezing time: 4 hours

        • 400 g coconut cream (whole tin) or solid part of chilled coconut milk,
        • 1 teaspoon of erythritol (to taste),
        • 1 vanilla pod or half a teaspoon of vanilla powder or 1 measuring spoon of vanilla-flavoured MCT collagen.

        Preparation:
        The recipe for keto coconut ice cream is very simple:
        Pour the coconut cream into a bowl.

        Then add the seeds from the vanilla pod or the vanilla powder.

        Optionally, you can add erythritol (not necessary, the cream is already sweet).

        Mix everything into a fluffy dough.

        Place them in the freezer for at least 4 hours.

        In the meantime, take the box out every 30 minutes and stir or mix to make the ice cream fluffy.
